Almond Milk

Ingredients
1 cup almonds, raw
2 1⁄2 cup water
2 cup ice cubes
9 medjool dates, chopped
1 tsp vanilla extract

Instructions
Soak almonds in water overnight. Pour off water, rinse almonds and place them in a blender with all other ingredients. Blend for 1 minute or until almonds are completely liquefied.

Southwest Avocado Blended Salad

Ingredients
10 oz organic baby spinach
1 cup water
1⁄2 cup red beans, no-salt
1 cup corn, frozen
1 avocado, chopped
1 tomato, chopped
1⁄2 clv garlic, minced or pressed
2 tbsp tahini, raw
1⁄2 tsp Bragg Liquid Aminos
1 tbsp Dr. Fuhrman’s Vegi-Zest or other no-salt seasoning
1 tbsp lemon juice

Instructions
Blend spinach with water to liquefy. Add remaining ingredients and blend until smooth and creamy.

Creamy Greeny Nutty Blended Salad

Ingredients
4 cup organic baby spinach
4 cup romaine lettuce, torn in pieces
6 walnut halves
1⁄2 cup soy milk
8 medjool dates, chopped
Water as needed to adjust consistency

Instructions
Using a blender, start with raw spinach and lettuce. Add other ingredients and blend, using a large carrot to push ingredients into the blade.

Garden Blended Salad

Ingredients
1 romaine lettuce, large handful
1 spinach, large handful (may substitute collard greens, kale, bok choy, etc.)
1 tomato, chopped
1 sweet red pepper, chopped
1⁄2 avocado, chopped
1 carrot, chopped
5 broccoli florets
1 orange, peeled (may substitute 1/2 pineapple for orange and apple)
1 apple, chopped
1 banana
4 medjool dates, chopped
1 handful walnuts, raw
1⁄2 cup pomegranate juice
ice cubes, small handful
Water as needed to adjust consistency

Instructions
Add all ingredients to a blender and blend for 1 to 2 minutes. With a conventional blender, it may be necessary to blend the ingredients in two or three batches and then mix together in a pitcher.

Whole Orange Juice Drink

Ingredients
3 medium oranges, peeled and seeded
1 apple, coarsely chopped
3 medjool dates, chopped
1 cup water
1⁄2 cup ice cubes
1⁄4 tsp vanilla extract

Instructions
Blend for 1 minute until creamy

Cantaloupe Slush

Ingredients
1 cantaloupe, peeled and chopped
1⁄4 cup pecans or walnuts
3 medjool dates, chopped
2 cup ice cubes
Instructions
Blend the ingredients together in a Vita-mix or other blender that can handle ice cubes.

Blueberry and Flax Yogurt

Ingredients
2 cup blueberries, fresh or frozen
3 medjool dates, chopped
1 tbsp flax seeds, ground
Water as needed to adjust consistency
1 cup soy milk

Instructions
Blend until smooth. Chill and serve.

Mixed Berry Freeze

Ingredients
1 10-ounce package of frozen mixed berries
1⁄2 frozen banana per person
1 1⁄2 cup unsweetened soy milk or almond milk
2 tbsp flax seeds, ground
1 1⁄2 cup water

Instructions
Place the soy milk in a food processor with the S blade in place. Turn the machine on and drop in small slices of frozen banana, one by one, then add the berries. Mix in the ground flax seeds and serve.

Nectarine Freeze

Ingredients
1 frozen banana, chopped
3 nectarines (or peaches), chopped
2 medjool dates, chopped
1⁄8 tsp cinnamon
1⁄2 cup soy milk
1 tsp vanilla extract
1 cup ice cubes

Instructions
Cut up the banana and fruit. Mix all ingredients together in a blender or Vita-Mix.

Blueberry Orange Smoothie

Ingredients
1 cup blueberries, fresh or frozen
2 oranges, peeled
1 tbsp flax seeds, ground
1 banana
3 medjool dates, chopped

Instructions
Blend in a blender until smooth.
